A retired nurse, Lois O’Brien resides in the Cranberry Lake section of Byram and is of Norwegian heritage. This Scandinavian cookie recipe was handed down by her aunt who she fondly remembers teaching her to bake. Preheat oven to 350 degrees ¾ cup butter ½ cup sugar 1 teaspoon almond extract 2 cups sifted all-purpose flour 1 egg white Crushed almonds Cream together butter and sugar. Add almond extract and combine flour, mixing well. Roll to ¼ inch thickness and cut strips 1½ x ¾ inches. Brush top with egg white slightly beaten. Sprinkle with sugar and crushed almonds. Bake on ungreased cookie sheet for 17-20 minutes. Makes about 4 dozen.
